Hello, since some of the cyclists wanted my flapjack recipe - here it is.

7oz butter
7oz sugar
2tbsp honey
9 1/2 oz rolled oats
3 1/2 oz coconut shavings
2 3/4 oz dried fruit/nuts/seeds (I use a combination of chopped apricots, cranberries, raisins and sunflower seeds)

Bake at gas mark 3 for about 20 minutes

Eat and enjoy
